Na patelni rozgrzać ok. 5 łyżek oliwy. Smażyć cebulę z porem około 5 min, aż będą miękkie i delikatne.
Z cukinii wyjąć nasiona (najlepiej wybrać je łyżeczką) i utrzeć na tarce o średnich oczkach wprost na patelnię. Ziemniaki pokroić na kostkę i wrzucić na patelnię. Całość doprawić solą i pieprzem. Zwiększyć ogień i dodać wino. Chwilkę pogotować, aż wino się zredukuje do połowy, następnie dolać mleko i gotować całość przez 30 min. na średnim ogniu. Gdy ziemniaki będą już miękkie, dodajemy rybę i gotujemy kolejne 15 min. do momentu, aż ryba zacznie się rozpadać (w trakcie gotowania, gdy potrawa będzie zbyt sucha można dodać wina).
Doprawić solą i sporą ilością pieprzu. Podawać z małą garścią pietruszki oraz dymką, skropione oliwą i sokiem z cytryny.
